Chopped Caprese salad

Ingredients

  • 10 oz Grape Tomatoes (container, halved or quartered)
  • 4 oz Fresh Mozzarella Cheese (cubed)
  • 1/2 cup Fresh Basil Leaves (torn, about 25 small leaves)
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 tablespoon Balsamic Vinegar (or balsamic glaze)
  • to taste Sea Salt (I like pink himalayan)

Instructions

  1. In a medium bowl, combine the halved or quartered grape tomatoes, cubed mozzarella cheese, and torn basil leaves.
  2. Add extra virgin olive oil to the bowl.
  3. Lightly toss all ingredients together to coat.
  4. Drizzle balsamic vinegar or balsamic glaze over the salad.
  5. Sprinkle with sea salt to taste.
  6. Serve immediately or chill for later.
