Creamy Tomato Pasta

Ingredients

  • 30 oz Black Beans (Two 15-ounce cans, do not drain)
  • 1 JalapeñO (Medium, seeded and finely diced (adjust to taste for heat))
  • 1 clove Garlic (Minced)
  • to taste Salt (Optional, add only if needed)

Instructions

  1. Finely dice the jalapeño, removing the seeds for less heat. Mince the garlic.
  2. In a medium saucepan, combine the undrained black beans, diced jalapeño, and minced garlic.
  3. Bring the mixture to a simmer over medium heat, stirring occasionally.
  4. Simmer for 10 minutes, or until heated through and slightly thickened.
  5. Taste and add salt only if needed. Canned beans are often salted.
