Ingredients
- 1 lb Ground Beef (At least 80% lean)
- 1 cup Onions (Chopped)
- 1 medium Red Bell Pepper (Chopped (about 1 cup))
- 1 1/2 cups Cheddar Jack Cheese (Shredded (6 oz))
Instructions
- Preheat oven to 375°F (190°C). Spray a 13x9-inch (3-quart) baking dish with cooking spray.
- In a 12-inch nonstick skillet, cook ground beef, chopped onions, and chopped red bell pepper over medium-high heat for 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked and vegetables are softened. Drain any excess grease.
- Stir in 1 cup of the enchilada sauce and the can of chopped green chiles into the skillet with the beef mixture. Heat to simmering, stirring occasionally, until well combined.
- Spread 1/2 cup of the enchilada sauce evenly in the prepared baking dish.
- Spread about 1/2 cup of the beef mixture down the center of each tortilla. Sprinkle each with 2 tablespoons of shredded cheese.
- Wrap tortillas tightly around the filling, placing each seam side down in the baking dish.
- Top the wrapped enchiladas with the remaining enchilada sauce. Sprinkle with the remaining shredded cheese.
- Bake for 23 to 27 minutes, or until hot and bubbly and the internal temperature reaches at least 165°F (74°C) in the center. Let stand for 5 minutes before serving.
