Easy Beef Enchiladas

Ingredients

  • 1 lb Ground Beef (At least 80% lean)
  • 1 cup Onions (Chopped)
  • 1 medium Red Bell Pepper (Chopped (about 1 cup))
  • 1 1/2 cups Cheddar Jack Cheese (Shredded (6 oz))

Instructions

  1. Preheat oven to 375°F (190°C). Spray a 13x9-inch (3-quart) baking dish with cooking spray.
  2. In a 12-inch nonstick skillet, cook ground beef, chopped onions, and chopped red bell pepper over medium-high heat for 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked and vegetables are softened. Drain any excess grease.
  3. Stir in 1 cup of the enchilada sauce and the can of chopped green chiles into the skillet with the beef mixture. Heat to simmering, stirring occasionally, until well combined.
  4. Spread 1/2 cup of the enchilada sauce evenly in the prepared baking dish.
  5. Spread about 1/2 cup of the beef mixture down the center of each tortilla. Sprinkle each with 2 tablespoons of shredded cheese.
  6. Wrap tortillas tightly around the filling, placing each seam side down in the baking dish.
  7. Top the wrapped enchiladas with the remaining enchilada sauce. Sprinkle with the remaining shredded cheese.
  8. Bake for 23 to 27 minutes, or until hot and bubbly and the internal temperature reaches at least 165°F (74°C) in the center. Let stand for 5 minutes before serving.
