Ingredients

  • 2 tablespoons Extra Virgin Olive Oil (high-quality extra virgin olive oil)
  • 1 teaspoon Ground Cumin (freshly ground for best flavor)
  • 1 teaspoon Smoked Paprika (adds a smoky depth)
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Dried Oregano (Mexican oregano preferred for authentic flavor)
  • 1/2 teaspoon Kosher Salt (or more, to taste)
  • 1/4 teaspoon Black Pepper (freshly ground, to taste)
  • 1.5 pounds Boneless, Skinless Chicken Thighs (cut into 1-inch pieces; chicken breast can be substituted)

Instructions

  1. In a medium bowl, combine the minced chipotle peppers in adobo sauce, olive oil, ground cumin, smoked paprika, garlic powder, onion powder, dried oregano, kosher salt, and black pepper.
  2. Whisk all ingredients together thoroughly until they form a smooth and evenly mixed marinade.
  3. Add the chicken pieces to the bowl with the marinade. Toss to ensure each piece is fully coated, allowing maximum flavor absorption.
  4. Cover the bowl tightly with plastic wrap or transfer the marinated chicken into a resealable bag. If using a bag, press out any excess air before sealing.
  5. Marinate in the refrigerator for a minimum of 30 minutes. For enhanced flavor, marinate for at least 2 hours, or ideally overnight. The longer the marinating time, the more flavorful the chicken.
  6. Preheat a grill or a large skillet (cast iron is recommended for best sear) over medium-high heat. Make sure the cooking surface is adequately hot before adding the chicken.
  7. Remove the chicken from the marinade, allowing any excess marinade to drip off. Discard the used marinade safely to prevent any bacterial contamination.
  8. Place the chicken pieces on the preheated grill or skillet in a single layer, ensuring not to overcrowd. Cook in batches if necessary to maintain high and even heat.
  9. Cook the chicken for approximately 6-8 minutes on each side, flipping only once, until it is fully cooked through. The internal temperature should reach 165°F (74°C). Use a meat thermometer inserted into the thickest part of the chicken to check for doneness.
  10. If using a skillet, ensure the chicken is nicely browned on both sides and fully cooked internally. Adjust the heat as needed to prevent burning while allowing even cooking.
  11. Once the chicken is fully cooked, remove it from the heat and allow it to rest for a few minutes. This step lets the juices redistribute, resulting in a more tender and flavorful outcome.
  12. Slice or shred the chicken using two forks, or chop it into smaller pieces, according to your preference of serving style.
  13. Serve immediately. The chicken is excellent in bowls, burritos, salads, or tacos. Add your favorite toppings like rice, beans, salsa, guacamole, sour cream, and shredded lettuce for a complete meal.
