Ingredients
- 8 ounces Cream Cheese (block, not spreadable, no additives, room temperature)
- 3 cups Shredded Mozzarella Cheese (low moisture, part-skim, no additives or preservatives)
- 4 Large Eggs (at room temperature)
- 4 tablespoons Aluminum-Free Baking Powder
- 1 ⅓ cups Almond Flour (finely ground, we use Bob’s Red Mill brand)
- 1 tablespoon Unsalted Butter (for greasing the skillet)
Instructions
- Preheat the oven to 400°F (200°C).
- Melt the cream cheese and mozzarella cheese together. You can do this either in a small pot over low heat, stirring constantly until smooth and resembling a thick, gooey paste, or in a microwave-safe bowl in 30-second intervals, stirring well after each interval until completely melted and smooth.
- In a large mixing bowl, combine the melted cheese mixture, baking powder, almond flour, and eggs. Mix well until a smooth dough forms. If the dough is too sticky to handle, add 1-2 tablespoons of almond flour until the desired consistency is reached.
- Cover the bowl and refrigerate the dough for 10-20 minutes. Chilling the dough makes it easier to handle and shape.
- Remove the dough from the refrigerator. Lightly wet or grease your hands to prevent sticking, and roll the dough into 24 equal-sized balls for smaller rolls or 12 for larger rolls.
- Place the rolled dough balls back into the refrigerator and chill for at least another 10 minutes. This helps the rolls maintain their shape during baking.
- Grease a 10.5″ cast iron skillet with the 1 tablespoon of unsalted butter, ensuring the bottom and sides are evenly coated. Alternatively, you can use any oven-safe skillet, cake pan, or ceramic baking dish.
- Arrange the dough balls in the prepared skillet, placing them close together so that they are touching slightly on each side.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the rolls are fluffy, golden brown, and cooked through. To check for doneness insert a toothpick into the center of a roll; it should come out clean.
- Remove the skillet from the oven and let the rolls cool for about 15 minutes before serving. This allows them to set slightly.
- Serve warm and enjoy!
