Ingredients

  • 16 ounces Turkey Kielbasa (sliced into 1/2-inch rounds (can substitute with pork or beef kielbasa))
  • 6-8 medium Potatoes (unpeeled and scrubbed, or peeled if preferred, cut into bite-sized pieces (Yukon gold or red potatoes recommended))
  • 1 medium to large Tomato (chopped into bite-sized pieces (Roma or beefsteak tomatoes work well))
  • 1 large Bell Pepper (any color, chopped into bite-sized pieces)
  • 1 large Onion (yellow or white, chopped into bite-sized pieces)
  • 2-3 tablespoons Season All (or to taste (Morton's Season-All recommended; can substitute with a blend of salt, pepper, garlic powder, onion powder, paprika, and celery seed))
  • 4 tablespoons Vegetable Oil (for sautéing (can substitute with olive oil))

Instructions

  1. Prepare the skillet: Pour the vegetable oil into a large skillet. Make sure the skillet is large enough to hold all of the ingredients.
  2. Heat the oil: Place the skillet over medium-high heat until the oil is shimmering and hot.
  3. Prepare the potatoes: Wash, scrub, and chop the potatoes into bite-sized pieces (about 1-inch cubes). Peeling is optional, depending on your preference.
  4. Cook the potatoes: Add the potatoes to the skillet in a single layer if possible. Cook, stirring frequently, for about 10 minutes, or until they begin to soften and brown slightly. This step is crucial for the potatoes to cook evenly.
  5. Add onions and peppers: Add the chopped bell pepper and onion to the skillet. Ensure everything is well combined.
  6. Season the vegetables: Sprinkle the vegetables with 2-3 tablespoons of Season All, or more to taste. Stir and cook for another 5 minutes, or until the onions become translucent and the peppers soften slightly, releasing their aroma.
  7. Cook the kielbasa: Push the vegetables to one side of the skillet to create space. Add the sliced kielbasa to the open area. Cook, stirring occasionally, for approximately 5 minutes, allowing the kielbasa to brown on at least one side. Browning the kielbasa adds flavor.
  8. Combine: Stir the kielbasa and vegetables together, distributing the ingredients evenly. This ensures that the flavors meld together.
  9. Simmer: Reduce the heat to medium-low. Cover the skillet with a lid and cook for another 5-10 minutes, or until the potatoes are fully tender when pierced with a fork. The lid helps to steam the vegetables and cook them more quickly.
  10. Season and Serve: Taste and add more Season All, if needed, according to your preference. Serve warm, either directly from the skillet or plated. Garnish with fresh parsley or a dollop of sour cream if desired.
