Ingredients
- 3 large Russet Potatoes (Scrubbed, unpeeled (optional), Using Russet potatoes is recommended for the best texture. Cut with a curly fry cutter or sliced into 1/4-inch thick fries.)
- 2 tsp Paprika (Adds color and flavor. Smoked paprika can be used for a smoky variation.)
- 1 1/2 tsp Salt (Adjust to taste. Sea salt or kosher salt is preferred.)
- 1/4 tsp Garlic Powder (Adds savory flavor.)
- 1/4 tsp Onion Powder (Enhances the overall flavor.)
- 1/8 tsp Cayenne Pepper (Optional, for a hint of spice. Adjust to your preference.)
- 3 Tbsp All-Purpose Flour (Helps to crisp the fries. Can substitute with gluten-free flour blend.)
- 1 large Egg (Acts as a binder for the seasonings.)
- 1 1/2 Tbsp Milk (Thins the egg wash. Water can be used as a substitute.)
Instructions
- Preheat oven to 450°F (232°C). Line a large baking sheet with parchment paper for easy cleanup and to prevent sticking.
- Bring a medium-sized pot of water to a rolling boil.
- Prepare the potatoes: Using a curly fry cutter, cut potatoes into curly fries. Alternatively, cut into 1/4-inch thick straight fries. Peeling is optional.
- Once boiling, carefully add the prepared potato fries to the water. Boil for exactly 3 minutes. This par-boiling step helps create a crispy exterior when baking.
- Drain fries immediately in a colander and rinse thoroughly with cold water to stop the cooking process.
- Thoroughly dry the par-boiled potatoes using paper towels. Removing excess moisture is crucial for achieving crispy fries.
- In a small bowl, combine paprika, salt, garlic powder, onion powder, cayenne pepper, and flour. Mix well, ensuring there are no lumps.
- In a separate small bowl, whisk the egg and milk together to create a smooth wash.
- Place the dried fries into a large mixing bowl. Pour the egg and milk mixture over the fries, tossing to evenly coat. Sprinkle the spice mixture over the fries, tossing until each fry is well-seasoned.
- Spread the seasoned fries in a single layer on the prepared baking sheet, ensuring they don't overlap. Overlapping can cause steaming instead of baking. If needed, use two baking sheets.
- Bake for 30-35 minutes, flipping the fries every 10-12 minutes for even browning and crisping. Bake until golden brown and crispy.
- Remove from the oven and serve hot immediately. Serve with ketchup, fry sauce, or your favorite dipping sauce.
