Ingredients

  • 3 large Russet Potatoes (Scrubbed, unpeeled (optional), Using Russet potatoes is recommended for the best texture. Cut with a curly fry cutter or sliced into 1/4-inch thick fries.)
  • 2 tsp Paprika (Adds color and flavor. Smoked paprika can be used for a smoky variation.)
  • 1 1/2 tsp Salt (Adjust to taste. Sea salt or kosher salt is preferred.)
  • 1/4 tsp Garlic Powder (Adds savory flavor.)
  • 1/4 tsp Onion Powder (Enhances the overall flavor.)
  • 1/8 tsp Cayenne Pepper (Optional, for a hint of spice. Adjust to your preference.)
  • 3 Tbsp All-Purpose Flour (Helps to crisp the fries. Can substitute with gluten-free flour blend.)
  • 1 large Egg (Acts as a binder for the seasonings.)
  • 1 1/2 Tbsp Milk (Thins the egg wash. Water can be used as a substitute.)

Instructions

  1. Preheat oven to 450°F (232°C). Line a large baking sheet with parchment paper for easy cleanup and to prevent sticking.
  2. Bring a medium-sized pot of water to a rolling boil.
  3. Prepare the potatoes: Using a curly fry cutter, cut potatoes into curly fries. Alternatively, cut into 1/4-inch thick straight fries. Peeling is optional.
  4. Once boiling, carefully add the prepared potato fries to the water. Boil for exactly 3 minutes. This par-boiling step helps create a crispy exterior when baking.
  5. Drain fries immediately in a colander and rinse thoroughly with cold water to stop the cooking process.
  6. Thoroughly dry the par-boiled potatoes using paper towels. Removing excess moisture is crucial for achieving crispy fries.
  7. In a small bowl, combine paprika, salt, garlic powder, onion powder, cayenne pepper, and flour. Mix well, ensuring there are no lumps.
  8. In a separate small bowl, whisk the egg and milk together to create a smooth wash.
  9. Place the dried fries into a large mixing bowl. Pour the egg and milk mixture over the fries, tossing to evenly coat. Sprinkle the spice mixture over the fries, tossing until each fry is well-seasoned.
  10. Spread the seasoned fries in a single layer on the prepared baking sheet, ensuring they don't overlap. Overlapping can cause steaming instead of baking. If needed, use two baking sheets.
  11. Bake for 30-35 minutes, flipping the fries every 10-12 minutes for even browning and crisping. Bake until golden brown and crispy.
  12. Remove from the oven and serve hot immediately. Serve with ketchup, fry sauce, or your favorite dipping sauce.
