Ingredients
- 4 medium Russet Potatoes (About 2½ pounds, scrubbed; choose firm, unbruised potatoes. Idaho potatoes can substitute.)
- 2 teaspoons Olive Oil (More as needed for rubbing potatoes)
- 1 teaspoon Flaky Sea Salt (Or to taste; kosher salt can be used.)
- 1/4 teaspoon Freshly Ground Black Pepper (Or to taste)
- Unsalted Butter (For serving, add a pat while hot, adjust to preference.)
- Finely Grated Parmesan Cheese (For serving, or use your favorite cheese like cheddar or Gruyère.)
- Chopped Fresh Chives (For serving; scallions or parsley can also be used.)
Instructions
- Preheat oven to 350°F (175°C) and position an oven rack in the center.
- Scrub the potatoes thoroughly under cold water to remove any dirt. Pat the potatoes completely dry with paper towels until no visible water remains.
- Use a fork to prick each potato multiple times all over. This allows steam to escape during cooking, preventing explosions and promoting even cooking. About 6-8 pricks per potato is sufficient.
- Rub each potato with olive oil, ensuring the entire surface is lightly and evenly coated. This helps create a crispy skin. Use your hands to spread the oil evenly.
- Season the potatoes generously with flaky sea salt and freshly ground black pepper, distributing evenly over the oiled surface. Don't be afraid to use enough salt to season the potato well.
- Place the seasoned potatoes directly on the oven rack, ensuring they are spaced evenly to allow for good air circulation. Avoid overcrowding the rack.
- Bake for 60–75 minutes, or until the potatoes are very soft when gently squeezed (use an oven mitt!) and the skin is crisp and slightly wrinkled. Cooking time depends on potato size.
- Remove potatoes from the oven and let them rest for about 5 minutes before handling. This prevents burning when opening.
- Carefully slice each potato lengthwise, making a deep cut but being careful not to cut all the way through to the bottom. This creates a pocket for toppings.
- Gently fluff the inside of each potato with a fork to create a light and airy texture. Be careful not to tear the skin during this process.
- Season the inside of each potato with a pinch of salt and pepper, adjusting to your preference. Taste before adding additional salt.
- Top with your desired toppings, such as butter, Parmesan cheese, and/or chives. Serve immediately while hot!
