Ingredients
- 2 pounds Pork Tenderloin (Cut into 2-inch pieces)
- 1 teaspoon Salt (or to taste)
- 1/2 teaspoon Black Pepper (or to taste)
- 2 large Carrots (Peeled and cut into 1/2-inch slices)
- 2 Celery Ribs (Coarsely chopped)
- 1 medium Onion (Coarsely chopped)
- 3 cups Beef Broth (Low sodium recommended)
- 2 tablespoons Tomato Paste
- 1/3 cup Dried Plums (Pitted and chopped (prunes))
- 4 Garlic Cloves (Minced)
- 2 Bay Leaves
- 1 sprig Fresh Rosemary
- 1 sprig Fresh Thyme
- 1/3 cup Greek Olives (Optional, pitted)
- Fresh Parsley (Chopped, for garnish (optional))
- Mashed Potatoes (Hot cooked, for serving (optional))
Instructions
- Sprinkle pork with salt and pepper.
- Transfer seasoned pork to a 4-quart slow cooker.
- Add carrots, celery, and onion to the slow cooker.
- In a small bowl, whisk together beef broth and tomato paste until combined.
- Pour the broth mixture over the vegetables and meat in the slow cooker.
- Add dried plums, minced garlic, bay leaves, rosemary sprig, and thyme sprig. Add olives, if desired.
- Cover and cook on low until meat and vegetables are tender, about 5-6 hours.
- Discard bay leaves, rosemary sprig, and thyme sprig before serving.
- If desired, sprinkle with fresh parsley and serve hot over mashed potatoes.
