Ingredients

  • 2 pounds Pork Tenderloin (Cut into 2-inch pieces)
  • 1 teaspoon Salt (or to taste)
  • 1/2 teaspoon Black Pepper (or to taste)
  • 2 large Carrots (Peeled and cut into 1/2-inch slices)
  • 2 Celery Ribs (Coarsely chopped)
  • 1 medium Onion (Coarsely chopped)
  • 3 cups Beef Broth (Low sodium recommended)
  • 2 tablespoons Tomato Paste
  • 1/3 cup Dried Plums (Pitted and chopped (prunes))
  • 4 Garlic Cloves (Minced)
  • 2 Bay Leaves
  • 1 sprig Fresh Rosemary
  • 1 sprig Fresh Thyme
  • 1/3 cup Greek Olives (Optional, pitted)
  • Fresh Parsley (Chopped, for garnish (optional))
  • Mashed Potatoes (Hot cooked, for serving (optional))

Instructions

  1. Sprinkle pork with salt and pepper.
  2. Transfer seasoned pork to a 4-quart slow cooker.
  3. Add carrots, celery, and onion to the slow cooker.
  4. In a small bowl, whisk together beef broth and tomato paste until combined.
  5. Pour the broth mixture over the vegetables and meat in the slow cooker.
  6. Add dried plums, minced garlic, bay leaves, rosemary sprig, and thyme sprig. Add olives, if desired.
  7. Cover and cook on low until meat and vegetables are tender, about 5-6 hours.
  8. Discard bay leaves, rosemary sprig, and thyme sprig before serving.
  9. If desired, sprinkle with fresh parsley and serve hot over mashed potatoes.
