Roasted Brussels Sprouts With Garlic

Ingredients

  • 1 pint Brussels Sprouts ((about a pound), trimmed and halved)
  • 4-6 tablespoons Extra Virgin Olive Oil (enough to coat the bottom of the pan)
  • 5 cloves Garlic (peeled)
  • Salt (to taste)
  • Black Pepper (to taste)
  • 1 tablespoon Balsamic Vinegar

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Trim the bottoms off the Brussels sprouts, then slice each sprout in half from top to bottom.
  3. Heat 4 to 6 tablespoons of extra virgin olive oil in a cast-iron pan over medium-high heat until the oil shimmers.
  4. Place the halved Brussels sprouts cut-side down in a single layer in the hot pan. Add the peeled garlic cloves, sprinkle with salt and pepper.
  5. Cook the Brussels sprouts undisturbed until they begin to brown on the bottom, about 5-7 minutes.
  6. Transfer the cast-iron pan to the preheated oven.
  7. Roast, shaking the pan every 5 minutes to ensure even cooking, until the sprouts are quite brown and tender, approximately 10 to 20 minutes.
  8. Remove the pan from the oven and taste the Brussels sprouts. Add more salt and pepper if needed.
  9. Stir in 1 tablespoon of balsamic vinegar.
  10. Serve the roasted Brussels sprouts hot or warm.
