Ingredients

  • 1 lb Chicken Sausage (Fully cooked, sliced into 1/2-inch rounds (Andouille, Italian, or your favorite flavor))
  • 1 medium Red Onion (Cut into wedges)
  • 2 medium Bell Peppers (Any color, seeded and chopped into 1-inch pieces)
  • 1 lb Broccoli Florets (Fresh, cut into bite-sized pieces)
  • 2 tbsp Olive Oil (Extra virgin olive oil)
  • 1 tsp Garlic Powder
  • 1 tsp Italian Seasoning
  • 1/2 tsp Salt (Or to taste)
  • 1/4 tsp Black Pepper (Freshly ground, or to taste)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the sliced chicken sausage, red onion wedges, bell pepper pieces, and broccoli florets.
  3. Drizzle the vegetables and sausage with olive oil. Sprinkle with garlic powder, Italian seasoning, salt, and black pepper. Toss to coat evenly.
  4. Spread the mixture in a single layer on the prepared baking sheet, ensuring not to overcrowd for even cooking.
  5. Bake for 25-30 minutes, or until the sausage is cooked through and the vegetables are tender and slightly browned, flipping the sausage and vegetables halfway through.
  6. Remove from the oven.
  7. Let cool slightly before serving. Serve immediately as is, or over rice, quinoa, or pasta.
