Ingredients
- 1 lb Chicken Sausage (Fully cooked, sliced into 1/2-inch rounds (Andouille, Italian, or your favorite flavor))
- 1 medium Red Onion (Cut into wedges)
- 2 medium Bell Peppers (Any color, seeded and chopped into 1-inch pieces)
- 1 lb Broccoli Florets (Fresh, cut into bite-sized pieces)
- 2 tbsp Olive Oil (Extra virgin olive oil)
- 1 tsp Garlic Powder
- 1 tsp Italian Seasoning
- 1/2 tsp Salt (Or to taste)
- 1/4 tsp Black Pepper (Freshly ground, or to taste)
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine the sliced chicken sausage, red onion wedges, bell pepper pieces, and broccoli florets.
- Drizzle the vegetables and sausage with olive oil. Sprinkle with garlic powder, Italian seasoning, salt, and black pepper. Toss to coat evenly.
- Spread the mixture in a single layer on the prepared baking sheet, ensuring not to overcrowd for even cooking.
- Bake for 25-30 minutes, or until the sausage is cooked through and the vegetables are tender and slightly browned, flipping the sausage and vegetables halfway through.
- Remove from the oven.
- Let cool slightly before serving. Serve immediately as is, or over rice, quinoa, or pasta.
