Ingredients
- 2 cups All-Purpose Flour
- 1 1/2 teaspoons Ground Cinnamon
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 1 cup Unsalted Butter (softened)
- 1 cup White Sugar
- 1 cup Packed Brown Sugar
- 2 Large Eggs
- 1 teaspoon Vanilla Extract
- 3 cups Quick Cooking Oats
- 2 tablespoons Water (for dipping fork)
- 2 tablespoons White Sugar (for dipping fork)
Instructions
- Gather all ingredients.
- In a medium bowl, whisk together the flour, cinnamon, baking soda, and salt until well combined.
- In a large bowl, beat together the softened butter, white sugar, and packed brown sugar with an electric mixer until creamy (at least 2-3 minutes).
- Beat in the eggs, one at a time, then mix in the vanilla extract.
- Gradually mix the dry ingredients into the wet ingredients until well combined. Add the quick cooking oats and mix until thoroughly incorporated.
- Cover bowl with dough and chill in the refrigerator for at least 1 hour.
- When ready to bake, preheat the oven to 375 degrees F (190 degrees C). Spray two cookie sheets with nonstick cooking spray that contains flour.
- Place the water in a small bowl and the 2 tablespoons of sugar in another small bowl. Roll the chilled dough into walnut-sized balls. Place the dough balls 2 inches apart on the prepared cookie sheets.
- Dip a large fork in water, then in sugar, and use to flatten each cookie. Re-wet and re-sugar the fork as necessary.
- Bake in the preheated oven until the edges are light golden brown and the centers are nearly set (8 to 10 minutes). Switch racks halfway through baking.
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
