Ingredients

  • 2 cups All-Purpose Flour
  • 1 1/2 teaspoons Ground Cinnamon
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 cup Unsalted Butter (softened)
  • 1 cup White Sugar
  • 1 cup Packed Brown Sugar
  • 2 Large Eggs
  • 1 teaspoon Vanilla Extract
  • 3 cups Quick Cooking Oats
  • 2 tablespoons Water (for dipping fork)
  • 2 tablespoons White Sugar (for dipping fork)

Instructions

  1. Gather all ingredients.
  2. In a medium bowl, whisk together the flour, cinnamon, baking soda, and salt until well combined.
  3. In a large bowl, beat together the softened butter, white sugar, and packed brown sugar with an electric mixer until creamy (at least 2-3 minutes).
  4. Beat in the eggs, one at a time, then mix in the vanilla extract.
  5. Gradually mix the dry ingredients into the wet ingredients until well combined. Add the quick cooking oats and mix until thoroughly incorporated.
  6. Cover bowl with dough and chill in the refrigerator for at least 1 hour.
  7. When ready to bake, preheat the oven to 375 degrees F (190 degrees C). Spray two cookie sheets with nonstick cooking spray that contains flour.
  8. Place the water in a small bowl and the 2 tablespoons of sugar in another small bowl. Roll the chilled dough into walnut-sized balls. Place the dough balls 2 inches apart on the prepared cookie sheets.
  9. Dip a large fork in water, then in sugar, and use to flatten each cookie. Re-wet and re-sugar the fork as necessary.
  10. Bake in the preheated oven until the edges are light golden brown and the centers are nearly set (8 to 10 minutes). Switch racks halfway through baking.
  11. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
