Ingredients

  • 2 cups Original Bisquick Baking Mix (For best results, use Original Bisquick Baking Mix)
  • 3 tablespoons Sugar (Granulated sugar recommended)
  • 2 teaspoons Baking Powder (Essential for fluffy pancakes)
  • 1 cup Milk (Any type of milk works (dairy or non-dairy))
  • 2 tablespoons Vegetable Oil (Can substitute with melted butter for richer flavor)
  • 2 Eggs (Large eggs recommended)
  • 1 teaspoon Vanilla Extract (Adds a hint of sweetness and aroma)

Instructions

  1. Prepare the griddle: Brush a griddle or skillet lightly with vegetable oil, or spray with cooking spray. Heat the griddle to 350°F (175°C) or heat the skillet over medium-low heat. The surface is ready when a few drops of water sizzle and evaporate quickly.
  2. Combine ingredients: In a medium bowl, whisk together all ingredients – Bisquick, sugar, baking powder, milk, vegetable oil, eggs, and vanilla extract – until just blended. Be careful not to overmix; a few lumps are okay.
  3. Cook the pancakes: For each pancake, pour slightly less than 1/4 cup of batter onto the hot griddle. Use a spoon or ladle to portion the batter evenly. Cook for about 30 seconds to 1 minute, or until bubbles start to form on the surface and the edges look dry.
  4. Flip and finish cooking: Carefully flip each pancake with a spatula. Cook the other side for another 30 seconds to 1 minute, or until golden brown. Do not press down on the pancakes while cooking to maintain their fluffiness.
  5. Serve immediately: Serve the pancakes immediately. Top with your favorite toppings, such as maple syrup, butter, fresh fruits, whipped cream, or chocolate chips.
